Chef owner of l’As and Cork, Daisuke Kaneko is tapping into Tokyo’s demand for fine dining restaurants offering haute cuisine at an affordable price and in an unpretentious environment. His cuisine combines contemporary French techniques and concepts with seasonal Japanese ingredients and meticulous presentation.
Chef Kaneko disguises his fresh-faced youth under a cloak of experience, talent and passion. Having worked at luminary venues like Alain Senderens in Paris, Osaka’s La Beccase at Quand L’appetit Va Tout Va, Daisuke developed a love of Franco-Japanese fine dining. Having opened L’As in early 2012 with such success, the chef opened Cork in late 2013 beginning his restaurant empire in Tokyo.
Both L’As’ and Cork’s design and dishes not only encompass Daisuke’s experience of Franco-Japanese cuisine, but reflect the simple concept behind them: to provide great food for a good price. Cork also prides itself on it’ssake and wine pairings.
