Since 2002 ChefChristopher Coutanceauhasworked in the Relais & Châteaux property, Coutanceau La Rochelle, created by his parents. The son of a restaurateur, he found himself interested in cooking from a very early age, and was taught toeducate histaste buds, to respect both produce and people, and to be disciplined. He rounded off hiseducation in major properties like’s in Eugénie-les-Bains, Bardet’s in Tours, and El Bulli in Rosas.Having run local bistros in La Rochelle, Christopher tookover the family restaurant with the help of my parents.

Today, his cuisine combinescreativity withappreciation of refined flavours and modern techniques, and a respect forlocal and traditional produce. His ingredients are locally sourced, and his ideas are internationally renowned.
