As Anna describes it: “One of my favourite, but also simplest, cocktails we make at Timberyard during summer, when lovage is abundant. I often use lovage stems—the kitchen uses the tender leaves.”
For the Lovage Whisky
Ingredients
- 50g of fresh lovage stems (leaves can be used in cooking, or you can just use whole bunches of lovage)
- 250ml of whisky of your choice
Method
- Clean the lovage and then leave it to macerate in whisky in a jar for at least a week.
- Strain the infused whisky and keep aside.
For the Fir Bark Bitters
Ingredients
- 200ml of neutral spirit (vodka)
- 30g fresh Douglas fir bark (this can be made with any other bark or simply replaced by your favourite bitters)
- 10g crushed juniper berries
- 5g dried wormwood
Method
- Add all ingredients to a jar and leave to rest for at least 2 weeks.
- Strain liquid and set aside.
For The Lovage Whisky Old Fashioned
Ingredients
- 60ml lovage whisky
- 1 bar spoon of fir bark bitters
- 1 sugar cube
Method
- Soak the sugar cube with fir bark bitters and muddle it into a syrup in a mixing glass.
- Pour the whisky in, add ice and stir.
- Serve over a big block of ice in a tumbler
