From 1 to 26 April 2026, the hotel’s garden restaurant, Le Jardin, is hosting a limited-time pop-up by Spanish chef Quique Dacosta, offering a fresh perspective on Mediterranean dining in the heart of the city.
Set within the property’s leafy, tranquil gardens, Le Jardin takes on a distinctly coastal spirit for the residency. Known for its light, produce-led cuisine and its interplay of Asian and Mediterranean influences, the restaurant provides a natural setting for Dacosta’s cooking—refined, expressive, and rooted in the flavours of Spain. The result is an experience that feels both transportive and grounded, shaped as much by atmosphere as it is by the food itself.
Dacosta, whose work has earned him seven Michelin stars across his restaurants, is widely recognised for his ability to reinterpret Spanish culinary traditions through a contemporary lens. Following his work at Royal Mansour Tamuda Bay, this latest collaboration continues his relationship with the brand, bringing his distinct approach to Marrakech. Seafood sits at the centre of the menu, reflecting his longstanding connection to Spain’s coastline, alongside a broader exploration of regional ingredients and techniques.
The menu itself moves between signature dishes and creations developed specifically for the pop-up. There is a crisp corn coca topped with red tuna, a smooth and deeply flavoured salmorejo, and roasted lobster finished with a sea urchin gratin. Rice dishes and paellas—central to Dacosta’s culinary identity—feature prominently, offering a more direct link to his roots while still carrying the precision and finesse that define his cooking.
