Emirates Palace Mandarin Oriental, Abu Dhabi will host a quartet of one-night-only collaboration dinners as part of the official 50 Best Signature Sessions dining programme, coinciding with the Middle East & North Africa’s 50 Best Restaurants 2026 awards ceremony. Taking place across late January and early February, the series will bring internationally celebrated chefs from India, South Africa, Italy and Tunisia to the UAE capital for a rare sequence of limited-seat gastronomic encounters.
Timed to align with the arrival of MENA’s 50 Best Restaurants awards in Abu Dhabi, the programme sees the Palace’s signature dining venues partner with some of the world’s most respected kitchens. Each collaboration has been conceived exclusively for the occasion, offering guests the opportunity to experience distinctive culinary philosophies in an intimate, one-night-only setting.
Martabaan by Hermant Oberoi × Trèsind Studio
The series opens on 31 January 2026, as Martabaan by Hermant Oberoi welcomes Chef Himanshu Saini of Trèsind Studio for a collaborative evening beginning at 7 pm. Guests can expect a surprise multi-course tasting menu priced at AED 650 per person, with an optional beverage pairing available for AED 350.
Known for its inventive reinterpretation of Indian cuisine, Trèsind Studio brings its signature precision and creativity to the evening, reimagining familiar flavours through a contemporary lens. Set against panoramic skyline views, the experience blends refined technique with subtle theatricality and narrative-driven presentation.
Sand & Koal × Salsify at the Roundhouse
On 2 February 2026, Sand & Koal, led by Chef de Cuisine Jack Jarrott, hosts a beachside collaboration with Chef Ryan Cole and Pastry Chef Nina du Toit of Cape Town’s Salsify. Beginning at 7pm, the evening features a multi-course tasting menu priced at AED 650 per person, with an optional beverage pairing at AED 350.
Rooted in seasonality, sustainability and open-fire cooking, the menu highlights locally sourced and foraged ingredients. Signature dishes such as grapefruit-cured sashimi and smoked springbok reflect Salsify’s thoughtful, environmentally conscious approach, set against Sand & Koal’s relaxed coastal backdrop.
Talea by Antonio Guida × Uliassi
A standout moment in the series takes place on 4 February 2026, as Talea by Antonio Guida hosts a landmark collaboration with three-Michelin-starred chef Mauro Uliassi. Starting at 7 pm, the one-night-only dinner is priced at AED 750 per person, with an optional beverage pairing available for AED 350.
Drawing inspiration from Italy’s Adriatic Riviera, Uliassi’s cuisine celebrates seafood and traditional Marche meat dishes, reinterpreted with inventive flair. Renowned for its warmth and sustainable ethos, the collaboration offers a rare opportunity to experience one of Italy’s most influential culinary voices in Abu Dhabi.
Lebanese Terrace × Le Golfe
The series concludes on 5 February 2026, with Lebanese Terrace welcoming Chefs Fulvio Pischedda and Majdi Rouissi of Le Golfe, Tunis, from 7 pm onwards. Priced at AED 450 per person, with an optional beverage pairing at AED 250, the evening is designed as a relaxed yet elegant celebration of Mediterranean flavours.
The menu spotlights ingredient-led dishes such as octopus carpaccio, grilled sardines and cuttlefish with candied lemon and capers. Paired with Tunisian wines and signature beverages, the experience is intended for long, convivial evenings on the Palace’s open-air terrace.
