Mauro Colagreco Hosts Duo Of Florida Feasts

It’s safe to say Mauro Colagreco knows his way around a kitchen. On the wave of opening Florie’s, his first US restaurant at Four Seasons Resort Palm Beach, the internationally acclaimed chef has much to celebrate.

An impressive feat, the prestigious Michelin Guide France recently awarded Colagreco’s flagship restaurant, Mirazur in Menton, France, its third Michelin star in its 2019 edition.

To celebrate this premier culinary accolade, chef Colagreco will be heading to Florida to host two exclusive events at Florie’s: A Taste of Mirazur dinner on Friday, March 15 and A Brunch Without Borders on Saturday, March 16 – which will offer foodies a sneak peek at the upcoming weekend brunch menu.

1 A Taste of Mirazur
Friday, March 15

This rare one-night only menu will express Florie’s Mediterranean spirit and the shared characteristics of the French Riviera and Palm Beach – an abundance of sea, sun-drenched gardens and local produce. Florie’s Bar welcomes guests in a toast to the evening with a garden-driven cocktail.

Book your space to enjoy a five-course dinner menu, highlighting South Florida twists on Mirazur signatures like Gillardeau oyster with shallot cream and williams pear declination, salt-crusted red beet with caviar cream, warm tart with asparagus and black truffle, turbot with celery mousseline, sorrel and smoked sauce and naranjo en flor, a dessert of orange sorbet, saffron cream and almond foam. What’s more, Sommelier Jessica Altieri will curate optional wine pairings to accompany the multi-course menu.

2 A Brunch Without Borders
Saturday, March 16

As a chef without borders, Florie’s menus are inspired by Colagreco’s multicultural background and global culinary vision – meaning this brunch will be no exception. Offering a taste of the weekend brunch menu debuting at the restaurant in April, Florie’s open kitchen will host interactive chef stations serving brunch classics such as Florida avocado toast and house-smoked salmon. There will also be new selections to devour, ranging from oysters and assorted seafood to stone hearth oven pizzas and langoustine risotto.

Entreés such as black sea bass, tandoori roasted suckling pig and beef fillet yakitori are served tableside to complement the station offerings. A dessert display presents Florie’s sweet confections including lemon tart, tiramisu, red berry tart, îlles flottantes and Saint Honoré. Don’t forget the tipples, either – Aa robust Champagne bar will serve classic Mimosas and Bellinis.
