…probably a hangover. In my line of work every good night follows with this! As you get older these tend to get worse but it’s part and parcel of enjoying the industry that you work in.

I’d drink and eat…

…..out all the time. Although this sounds decadent, it is so important. You need to constantly be going to new restaurant and bars to see what the competition is doing. London especially is so exciting at the moment for innovation.

I’d prioritise…

…always my work. I am not a workaholic to any degree, however I cannot concentrate on anything else unless everything at work is up to date. Work hard, play hard.

I’d make sure everyone knows about…

…the best bars to drink in London. My friends are always asking me where to go and they are never disappointed with where I suggest. Bars are about atmospherics and service, not just about drinks, so some of my suggestions are quite surprising!

The national drink would be…

…Irish Whiskey. There has been a lot of interest in this type of whiskey of late, and for good reason. Some unreal ones out there at the moment and I cannot get enough. My tip for 2015.

My Royal palace would be…

…The Tower of London. Such a cool palace and I would have a place to lock up all those bad tippers!

My people would have to be…

…open minded. I like people who want to try new things and not just stick to what they know

I would bring back…

…Led Zeppelin – it’s always good to have some rock and roll in your life.

I would travel…

…by helicopter! One of my ambitions is to be able to fly helicopters so am taking lessons next year. My business partner wants his own plane so we might start our own airport!

I would knight…

…my two business partners definitely. I could not have done what we doing now without them. They have so much energy to make things happen, it’s incredible.
