This spring, Chef Michael Caines MBE is joining forces with Sam Moody for a night of Michelin-starred teamwork at the Ballyfin hotel.

Join the iconic Ballyfin hotel in Ireland for a one-off culinary evening in collaboration with renowned Chef Michael Caines MBE.

Michael will join former colleague and Ballyfin Head Chef, Sam Moody and his team, for one night only on Thursday 25th April, where the two renowned chefs will jointly create a bespoke menu for guests inspired by some of their most classic dishes.

Home to the illustrious Coote Family for 100 years, Ballyfin has long been admired as one of the most distinguished late Georgian houses in Ireland, gaining a reputation as one of the suavest places to stay.

Executive Chef Michael Caines MBE held two Michelin stars at Gidleigh Park, Devon, for over 18 years and has since gone on to create his very own vision of a luxury country house hotel in his home county of Devon – Lympstone Manor. Here, just six months after opening, he was awarded a coveted Michelin star.

On this special gastronomic evening at Ballyfin, guests will be welcomed with a glass of Champagne on arrival before enjoying a welcome lunch in the State Dining Room

. After lunch guests will have the chance to enjoy a guided tour of the hotel giving an overview of the history, art and antique collections housed at Ballyfin.

In the evening, pre-dinner drinks and canapés will be served in the Library, accompanied by music from Ballyfin’s resident pianist, before Chef Michael Caines MBE personally introduces the evening’s gourmet event.

Guests will then be presented with a specially designed six course tasting menu showcasing an array of Michael and Sam’s signature dishes. The menu is sure to tantalise guests’ taste buds, combining the subtle, Devonshire flavours of Lympstone Manor with the classic Irish menu of Ballyfin.

Michael and Sam share a close bond having worked together for a number of years at Gidleigh Park where Sam trained under Michael’s tutelage. The talents of these two extraordinary chefs combined will no doubt delight our guests discerning palates, I’m sure it will be an evening to remember”.

Chef Michael Caines MBE said “It’s been a pleasure to nurture and watch Sam develop his career from his time at Gidleigh Park, onto The Bath Priory and now as Head Chef at Ballyfin.

Sam’s no-nonsense cooking with a focus on the ingredients and flavour resonate with my own philosophy in cooking. He’s a brilliant team leader and a wonderful talent and I can’t wait to cook together for this incredible event, whilst taking in and enjoying the fabulous delights and luxury that is Ballyfin.”
