New Nordic made easy

April 2016 will see the release ofThe Nordic Kitchen by the partner of world renowned Noma, Claus Meyer. Comprising ofover 350 recipes,the bookwill bring the ethos that built noma into the world’s best restaurant into the home with easy-going, accessible dishes ideal for family life. The book will be divided into four seasonal chapters with the emphasis on getting the most from the food and flavours in season. There are also features on food from the wild, including chanterelles, dandelions and blackberries.

Claus Meyer commented, “A great cuisine is defined as much by its family food as by its fine dining achievements. I am convinced that some of the recipes in this book have the capacity to spread joy and open up new culinary avenues for food lovers just like Mediterranean and Asian cuisines have done.”

Claus Meyer has been a gastronomic entrepreneur for over thirty years and in addition to his numerous companies employing more than 800 staff, is an affiliated professor at Copenhagen Business School and Social Impact Fellow at University of California, Berkeley Haas School of Business. Claus Meyer co-founded the Melting Pot Foundation, with the aim of improving the quality of life and provide new opportunities to vulnerable individuals in Denmark as well as in selected projects abroad. He has inspired a generation to rediscover local Nordic produce through his portfolio of businesses, cookbooks, TV shows, lectures and agenda-setting viewpoints. He co-founded the celebrated restaurant Noma, Copenhagen (Denmark) in 2003 and also founded restaurant GUSTU, La Paz (Bolivia). In spring 2016 he will steer the opening of a Nordic-themed food hall and a 100-cover Nordic ‘brasserie’ in the city’s iconic Grand Central Terminal, Manhattan.
