4-hour dining lands in London

In the latest issue of Four we’ve reported on how a slew of new openings are livening up the City’s dining scene. Restaurants from the likes of L’Anima and Hakkasan are opening in the Square Mile, and now we hear that the people behind Sushi Samba (which has literally just opened in the Heron Tower’s 38thand 39thfloor) have landed the top spot in the high rise development and are launching Duck & Waffle on the 40thstorey.

What’s different about this venture is that food will be available all day and all night – something that while common in the States, is
very hard to find in London. Food is inspired by broad European and British influences with plates designed for sampling andsharing – with the menu offering breakfast, brunch, lunch, dinner and late night menus.

Native Brit Daniel Doherty will be at the helm of the kitchen. Doherty was previously atThe Old Brewery at the Royal Naval College in Greenwich, The Empress in Victoria Park, and The Ambassador in Exmouth Market, London. He also worked at Roux Fine Dining in the City. At Duck & Waffle, Doherty’s modern take on European cuisine will showcase his culinary diversity, with an emphasis on local, rustic, seasonal and sustainable British ingredients.

The menus at Duck & Waffle will evolve throughout the day, kicking off with breakfast from 6am-11am, encompassing dishes such as Foie Gras ‘All Day Breakfast’; and Duck & Waffle with fried duck egg and mustard maple syrup. An all-day menu will be served from 11am-2am, including dishes such as Old Spot Pork Pie with smoked quail egg; Homemade Black Pudding with gooseberry chutney; Bacon-Wrapped Dates with linguiça sausage and endive salad; British Seafood Pot Roast with n’duja and wild sea vegetables; Lamb Sweetbreads with broad beans and smoked bacon; and Fourme d’Ambert Eccles Cakes. From 2am-6am the restaurant will offer a late night menu, featuring, among other dishes, Roasted Galloway Veal Marrow Bones with ox cheek marmalade, pickled girolles and parsley.

Award-winning architects CetraRuddy designed the 98-seat interior, which features wraparound floor-to-ceiling windows that overlook the expanse of the City and notable London landmarks; a bustling open kitchen; a 24-seat chef bar offering artisanal cocktails and an expansive rum selection; and a private dining room. The décor is playfully injected with modern influences: stainless steel and frosted glass juxtaposed by old world materials such as white marble, rustic metals, weathered wood and ceramic tiles. With its 24 hour menu, stunning views and artful interpretations of regional cuisine, Duck & Waffle looks set to fit right in to an increasingly buzzy City scene.
