LIMA London’s Pisco SourRecipe
2 ounces Pisco Quebranta
1 ounce key lime juice
1 ounce sugar syrup
¼ white of a fresh egg
Place all ingredients into a cocktail shaker filled with ice cubes. Shake vigorously for about 15 seconds.
Strain into a rocks glass of appropriate size.
To finish, place three drops of bitters in the center of the egg foam.
Tip: Key Lime juice and simple syrup can be adjusted to taste. Some prefer a more sour drink while others something sweeter.
