- Chefs must be aged 35 or under at the time the list was made (17 January 2014).
- The chefs can work in someone else’s kitchen or his/her own restaurant, but must have been in the position less than five years.
- Each chef must have been in the region they are working in for at least two years, but do not necessarily have to originate from the region.
- Panellists must have visited restaurant within the last 12 months.
- The Rising Stars’ shortlist is determined by a points scheme. The individual panellists determine each chef’s allocated points, which are accumulated to determine each Rising Star’s position. The finalists are the four chefs from each region’s with the highest points.

Each region was headed up by an acclaimed judge;, chairman of World’s 50 best, representingEurope; Sao Paulo-based food writerrepresentsLatin America; Executive Vice President of the James Beard Foundation, Mitchell Davies representsNorth Americaand Tokyo-based food columnistrepresentsAsia & Australasia. Each judge has worked with a group of three panellists within their region, with each one submitting a list containing the names of their selected 10 Rising Star chefs. Each list was compiled based on basic criteria set out byFOURand submitted earlier this year, before being crosschecked, tallied up and whittled down to four names.
As well as the four illustrious judges aforementioned, a panel of three others will support the choice of rising star within each region. Each panellist will submit a list of their ten chosen Rising Stars, which will then be whittled down to produce a list of each regions top four Rising Star chefs and singling out the winners.
