Lisbon born Michelin star chef, Nuno Mendes is the founder of multiple restaurants in London, which take inspiration from his home country, Portugal as well as his extensive experiences abroad. He is a pioneer in gastronomy and always searching for innovative and inventive culinary techniques and experiences.
Following his training at California Culinary Academy in San Francisco in the 1990s, Nuno worked with some of the world’s leading chefs, including Wolfgang Puck, Rocco di Spirito and Jean-Georges Vongerichten. During this time Nuno travelled throughout Central America, Europe and Asia gaining both culinary and life experiences along the way.
In 2006 Nuno opened gastro pub Bacchus in Hoxton, London where he received critical acclaim for his avant-garde food, before setting up and developing a new concept restaurant called The Loft Project. Nuno ran this from his East London apartment, where some of the best chefs cooked in front of guests, offering a pioneering and intimate experience. After having closed down for two years, The Loft Project will reopen in London in 2014.
Nuno Mendes opened London-based Viajante, meaning ‘traveller’ in Portugese in 2010, which is inspired by the world’s cuisines and aims to provide playful dishes using sustainable and fresh ingredients. Within its first year of opening it received a Michelin star and wasincluded in the 2013 San Pellegrin’s World Best Restaurants. Now, Nuno has recently left Viajante for an exciting new venture at theChiltern Firehouse, as ex-fire station, which the acclaimed chef plans to wow London’s Mayfair streets with.
