Founded in 2000 by Chef Enrique Olvera, Pujol seeks to create contemporary Mexican cuisine with personal style using local ingredients and applying techniques both ancient and modern. Featured dishes are constantly renewed and rotated as part of an ongoing interest in exploration, evolution and flavor proposals that speak equally to memory as they do to the extraordinarily rich ingredients of Mexico’s legendary cuisine.
