Embarking on a weekend extravaganza of fine-dining cuisine, Identità Milano is going by the theme of ‘A Tasty Intelligence’ from 9 – 11 February. Based at the MiCo – Milano Congressi in Via Gattamelata, an impressive list of professional and pastry chefs will grace its stages over the three days.
The theme of ‘A Tasty Intelligence’ encompasses the harmony between healthy eating and awareness of ingredients and the conceptualisation of exquisite flavours. Paolo Marchi, creator and curator of Identità Golose says "contemporary chefs need to be intelligent in combining flavours, costs, tastes and the client’s physical pleasure because it should be clear by now that a meal doesn’t finish with the last bite, but with digestion.”
The first day, Sunday 9 February will be host to important international and national culinary professionals such as Carlo Cracco and Heinz Beck over lectures about ‘A Tasty Intelligence’. In addition, there will be lectures on the vegan world, natural pizza and pastry-making.
The next day will be dedicated to bread and pizza, the use of beer and water in cooking, with lectures being held and more illustrious chefs gracing the stage, such as Gastón Acurio and Roberta Pezzella.
Following tradition, the third day will be dedicated to the world of pastry-making and to the guest country, Thailand. Odes to chocolate, sweet desserts and pasta will be had, as well as a cookbook presentation.
