Okay, so it’s not so clandestine. The address is One Water Street on Vancouver’s vibrant and picturesque strip of bars, cafes, restaurants and shops. It is the location of executive chef Jefferson Alvarez’s cook-athon, where from 16 January to 15 February, along with pastry chef Kira Desmond, he’ll prepare 300 dishes in a daily changing ten-course tasting menu.
Cooked up by Alvarez as Vancouver’s first multi-brand concept store, Secret Location is home to a retail boutique and the Tasting Room, where the 30-day event will take place.
Alvarez and his team will serve contemporary European-style cuisine, dipping into Canada’s brilliant West Coast ingredients, to serve dishes such as the foie gras, a brioche crumble, almond strudel and fruit mostarda and the intriguing mixture of ‘Winter Garden’, (pictured) a dish combining pine mushroom ice cream, bay leaf crumble, parsnips and honey confiture de lait, Alpaco chocolate and parsnip ice cream. “I like to be unique, and I like to experiment and push boundaries,” chef Alvarez says. “I believe cooking has no limit and, for someone reading my menu and paying for my food, it should be an experience from beginning to end.”
Secret Location opened in June 2012 offering an eclectic mix of international designers, covering women’s fashion, literature, novelty gifts, gadgets and homewares.
Within Secret Location’s Tasting Room, Jefferson serves a daily menu from morning through to evening. The ten-course tasting menu will cost $75pp with wine pairing.
