Vivek regularly appears on Saturday Kitchen, Celebrity Masterchef, and UKTV’s Market Kitchen. He took a quick break from his busy schedule to speak to FOUR Magazine.
What’s your first food memory?
I've had various different experiences with food throughout my life. All have shaped and moulded my cookery today. My first food memory would be that of attending Bengali weddings as a young child to the trauma of having travelled through South India (not liking coconut) as a 10 year old boy…
Sweet or Savoury?
Char-grilled rump of lamb with garlic and spinach sauce.
What do you eat the most?
Spiced masala omelette on a flute bun.
What’s your favourite kitchen gadget?
Morter and pestle- I use it for everything!
Which chef do you admire?
There's definitely a few. The first would be Eric Chavot, we have collaborated a number of times and he has become a good friend over the years. I really admire his style of cooking.
I'm also an avid reader and have been inspired by books of the likes of Marco Pierre White and Escoffier in the early 90’s.
What are you having for lunch today?
Galouti Lamb Sliders from Anise bar!
What’s the last restaurant you ate in?
The Hawksmoor in Spitalfields.
What’s your idea of the perfect weekend?
A rare weekend off to spend with my wife and kids. The day usually starts off by cooking American pancakes, complete with bananas, blueberries and caster sugar. This is followed by a long bike ride with the family and we finish the day with a delicious Asian/original inspired dinner.
If you could take a plane ride anywhere to eat, where would it be and why?
Vietnam! I love street food with clean, fresh flavours combined with the lightness of touch. I’ve never been to Vietnam but am looking forward to it one day!
