"Just give every day and be consistent." With this motto in the first line of his entry in the Red Guide, chef Arnaud Donckele of La Vague d'or, La Résidence de la Pinède in Saint-Tropez is a man who displays unbridled culinary wisdom and a dedication to paying tribute to those who have marked his career.

Trained by Michel Guérard and Alain Ducasse, and formerly assistant to Jean-Louis Nomicos at the Lasserre restaurant in Paris, Donckele came to La Vague d'or in 2005 with solid experience, the taste for rigour and a huge passion for local produce and small producers. He has recently earned his third Michelin star in the 2013 Michelin Red Guide for France, recognition he has received for the knowledge and identity, which he has put into his Mediterranean menu, as well as for the exquisite cohesion he has developed between his brigade of 21 cooks and bakers in the kitchen at La Vague d'or.
