Italian chef Massimiliano Alajmo is a 3 Michelin starred chef with a host of restaurants under his belt, namely his flagship restaurant, Le Calandre outside Padua in Italy’s Veneto region. The restaurant itself is a testament to chef Alajmo’s playful approach to cooking, which is ironic when you think back to 2002 when Alajmo became the youngest chef, at 28 years old, to be awarded with 3 Michelin stars.

One of his signature dishes involves ‘the gomitata’ or the ‘elbow dig’, a new pasta shape which he came up with during a gym session, which gives you an idea of just how playful his concepts can get…

This showcase of his recipes, however, are anything but childish. With his expert combination of flavours and aptitude for complex techniques, these are a serious set of dishes to be reckoned with only by those with a culinary prowess, rarely found outside of a professional kitchen.
