Danish-born Chef Kofoed is an acclaimed Nordic chef, whose cuisine is lucid, light and dynamic, exploring nature's perpetual change and beauty. His mission is to create meals that involve all our senses - restores, challenges and enriches. Geranium has been awarded with two Michelin stars and is part of the World's 50 Best, heralded by the acclaimed chef Rasmus.
Educated as a chef at Hotel D’Angleterre, Denmark, in 1997, chef Kofoed began his culinary career working at two Michelin star restaurant Scholteshof, Belgium. Since, he has worked in some of the most reputable and Michelin star-studded Danish restaurants, including Kommandanten and Krogs Fiske restaurant.
In 2003, chef Kofoed was noted for his culinary excellence as ‘Chef of the Year’, Denmark. This was the first of many awards for chef Kofoed, who then went on to become the Winner of the Danish Bocuse d’Or-qualification in 2004 and in that same year, winner of the Nordic “Chef of the Year”, Sweden. In 2005 Chef Kofoed was also awarded a bronze medal at the Bocuse d’Or Awards, France.
In 2005 Rasmus moved to become Head Chef at Hotel D’Angleterre, Denmark, and later, Head Chef at restaurant Geranium, which was awarded a Michelin star in 2008. Under the helm of chef Kofoed, restaurant Geranium entered the prestigious Worlds 50 Best Restaurants list and now stands at Number 45, having climbed from Number 77 in 2009.
