When Noma first opened in November 2003 its kitchen housed a small team of about nine or ten: three chefs and two apprentices and at the front of house, three waiters and one apprentice.

Almost ten years later, Noma now has around fifty kitchen staff and twenty in the front of house - a good enough excuse, we say, for head chef René Redzepi to fork out on a kitchen refurbishment, designed by Maes Inox.

Set to be demolished and rebuilt entirely from scratch, the kitchen is to be a space in which things flow, providing guests with improved service, where design is aimed at creating a more comfortable and communal environment for the Noma chefs.

Demolition will begin 1 July and final renovations will be completed by 20 July, just in time for Noma’s reopening on 1 August.
