To get you in the Friday feeling and to mark British Tomato Week which is taking place this week 20-26 May, FOUR has gathered a collection of Tomato Cocktails, designed by award-winning mixologist and cocktail extraordinaire Thomas Aske of The Whistling Shop in Shoreditch, London. Tom uses Isle of Wight tomato juice, which is made from 100% Isle of Wight tomatoes – produced in small batches for quality and taste.

Arreton Peach

Glass:

Large Coupe

Ingredients:

25ml Bols Genever

25ml sherry washed blue cheese

100ml tomato juice

2 dashes Peach Bitters

1 pinch salt

5ml soy sauce

cherry tomatoes

Method:

Roll with ice and strain. Garnish with sherry washed blue cheese and cherry tomatoes

 

Avant-Garde Sangrita

Glass:

Grappa and small jug

Ingredients:

50ml Don Julio Tequila

50ml Sangria

100ml tomato juice

Green tea

Dash rose water

Pinch salt & pepper

Sprig of parsley

Sardines

Oak smoke

Method:

Add all the ingredients under a bell jar and smoke. Garnish with sardines, parsley and oak smoke.

 

Cream of the Crop

Glass:

Grappa and small jug

Ingredients:

50ml Don Julio Tequila

50ml Sangria

100ml tomato juice

Green tea

Dash rose water

Pinch salt & pepper

Sprig of parsley

10ml olive oil

Method:

Roll with ice and pour. Serve with thyme and cherry tomatoes.
