Born in Porto Alegre, Brazil, in 1978, Helena knew she wanted to become a chef from an early age and moved to São Paulo at just 17 to embark on a career in the culinary arts.
Her early start meant that Helena now has the sort of culinary education critics swoon over: in São Paulo she worked in some of the regions most sought-after restaurants and in 2000, after moving to Europe, she began working under the tutelage of Spanish culinary master Joan Roca of three Michelin star restaurant El Celler de Can Roca in Girona.
Returning to Brazil in 2004, Helena opened restaurant Maní alongside her husband Daniel Redondo and friends Giovanna Baggio, Fernanda Lima and Joao Paulo Diniz. Here, she serves her guests contemporary Brazilian cuisine infused with culinary inspirations she's picked up from her time working abroad, in Maní's relaxing and welcoming surrounding.
