Since 2002 Chef Christopher Coutanceau has worked in the Relais & Châteaux property, Coutanceau La Rochelle, created by his parents. The son of a restaurateur, he found himself interested in cooking from a very early age, and was taught to educate his taste buds, to respect both produce and people, and to be disciplined. He rounded off his education in major properties like Michel Guérard’s in Eugénie-les-Bains, Bardet’s in Tours, and El Bulli in Rosas. Having run local bistros in La Rochelle, Christopher took over the family restaurant with the help of my parents.

Today, his cuisine combines creativity with appreciation of refined flavours and modern techniques, and a respect for local and traditional produce. His ingredients are locally sourced, and his ideas are internationally renowned.
