Following this, Umberto took the position as head chef at the legendary Toscana at the Ritz Carlton in Hong Kong. While the restaurant closed in 2008, during the time it was open, it contributed 15 successful years of fine dining to the culinary world. Restaurant Toscana also had sister restaurants open in Laguna Nigel, California, Boston, Osaka, Seoul, and Singapore.

Umberto Bombana’s 8 ½ Otto E Mezzo Bombana in Hong Kong is the only Italian restaurant outside of Italy that has been awarded with three Michelin stars. Having only opened in 2010 it has firmly established itself as one of the finest culinary destinations in Asia. In 2011 it was placed as the 13th best restaurant in Asia in the Miele Guide.

By many, he is considered the king of the white truffle due to his mastery of the luxury ingredient and was made Worldwide Ambassador of the White Truffle in 2006 by the Piedmontese Regional Enoteca Cavour in Italy.
